Healthy Vegetarian Crock Pot Recipes for Vegan Meals

Vegetable Curry Vegan Slow Cooker Recipe

Ingredients:

  • 1 cup onion, finely chopped
  • 2 tablespoons tapioca
  • 1 teaspoon coriander, ground
  • 2 cups carrots, diced
  • 2 potatoes, cut into small cubes
  • 2 cups garbanzo beans, drained
  • 1 clove garlic, minced
  • 1 cup green beans, cut into halves
  • 2 teaspoons Curry powder
  • 1/4 teaspoon Salt
  • 1/8 teaspoon cinnamon powder
  • 1 large can vegetable broth
  • 1 can tomatoes, un drained

Directions:

Add all ingredients into slow cooker (except tomatoes) and pour veg. broth on top.

Cook for 8-10 hours on low.

Add un drained tomatoes, stir and let stand for 10 minutes before serving.

Serve with white, brown or fried rice.

 

Classic Slow Cooked Loaded Baked Potato

Ingredients:

  • 1 baking potato (per person)
  • aluminum foil
  • butter, to taste
  • sour cream, to taste
  • 1 teaspoon chives
  • 1/4 red pepper, finely chopped
  • 1/2 cup cheddar cheese
  • salt and pepper, to taste

Directions:

Poke holes in potatoes with fork and wrap with aluminum foil.

Cook for 8-10 hours on low or 3-4 hours on high temperature.

Once cooked, remove from foil and cut open lengthwise. Add the rest of ingredients to potato and serve.

 

Crockpot Corn Chowder

Ingredients:

  • 2 cups vegetable broth
  • 2 cups soy milk
  • 1/4 cup butter or margarine
  • 2 cans (16 oz) whole kernel corn, drained
  • 3 white potatoes, diced large
  • 1 red onion, chopped
  • pepper & salt to taste

Directions:

Add all ingredients (except soy milk and butter).

Cook for 6-8 hours on low. Then add milk and butter and cook for 1 more hour.
