Ingredients:
- 2-3 pounds skinless chicken thighs or breasts
- 1 cup celery, diced

- 1 onion, sliced

- 1 can tomatoes
- 3 pkg. sugar substitute
- 1 tsp. Cajun seasoning
- 1/2 tsp. paprika
- salt & pepper to taste
- Hot sauce to taste
- 2 cups white rice, cooked
Directions:
Place chicken in slow cooker. Add remaining ingredients into cooker (except rice).
Cook on low 6-8 hours. (Rice cooked separately)
